Pro Tips: Citrus Shrimp Tacos

Our August Recipe of the Month is all about bringing grilled flavors inside! We’re using a double-burner griddle to sear shrimp with our Sizzling Citrus Sear Blend (Chef Kris’ personal favorite!). Here, we’ve got all the tips you need to bring cookout vibes to the table—rain or shine. Let’s fire things up (metaphorically, of course).

Get big sear—no grill required 

You don’t have to fire up your grill to get mouthwatering grill marks, all you need is a grill pan. For this month’s recipe, we’re reaching for the Chef Collection Reversible Grill/Griddle. One of our favorite pieces for when we’re craving cookout food but the weather isn’t right. This pan has lifted grill ridges that sear your food just like the grill grate on your outdoor grill.

If you can't turn down the heat, get out of the kitchen

Remember, just because you’re bringing big grilled flavor to your stovetop, doesn’t mean you need to crank up the heat. Cast iron provides great heat retention. As long as you’ve allowed your cookware to preheat, you’ll get the perfect sear every time. If your cookware gets too hot, this can cause your food to stick and create a dish-duty headache. Every stovetop is different, but using medium to medium-high heat does the trick for most cast iron cooking. And don’t forget to grease your cooking surface with an oil that has a high smoke point. Skewer that—twice! 

Whether we’re grilling inside or out, skewers are one of our favorite tools. In fact, we’ve got a whole article with tips and tricks for grilling with skewers, here. For this taco recipe, double-skewering your shrimp will keep everything in place on the grill, making it easy to flip and get a great sear on both sides. To remove, simply use a paper towel and slide the shrimp off the skewers and onto a plate for taco building!

Patience, young chef. 

Time is the key to getting ‘gram-worthy sear marks. First, make sure your cooking surface has had plenty of time to preheat before adding your food. You can splash a few drops of water on the pan, and if they dance, it’s time to sizzle. Get your food on the grill and set a timer, then sip on your beer and prep your toppings, but whatever you do, resist the urge to fiddle with your food too early! Direct contact with the grill pan is the name of the game here. 

Fall in love with a fish spatula  

This is a fave among Chef Kris and the Lodge team. It’s a great tool for sizzling delicate foods like fish, eggs, pancakes, fruits, and veggies. The thin edge makes it easy to slide right under whatever you’re searing for easy flipping. And the trapezoid-like shape makes it easy to maneuver between the sidewalls of your pan and your food. Plus, if you’re making something greasy (think: smash burgers or pan-fried chicken), the slotted base allows excess grease to drip off as you remove your food from the pan. After you use one, you’ll never go back.
